Le Cirque, the crown jewel of The Leela Palace that once sat majestically on the 10th floor, has undergone a stunning transformation. Now relocated to the first floor, the iconic restaurant promises to surprise gourmands. Ahead of its official launch, we got an exclusive preview of its new avatar.

The Ambience

A corridor lined with the finest wines on one side and photographs of Le Cirque's founder, Sirio Maccioni, alongside eminent personalities like Paris Hilton who have dined at his New York restaurant on the other side, leads one into a luxe space. Think warm, yellow lighting, plush seating that invites you to settle in for a leisurely meal, and  Italian music sets just the right vibe.

A refreshing amuse-bouche cleanses my palate, preparing me for a spread of Italian and French flavours. For antipasti, I begin with the Le Cirque Vegetable Garden with Truffle Dressing, almost too pretty to eat. A peas and mint sorbet take centrestage, lending a refreshing touch, while crisp vegetables, pickled beetroot, and frosted walnuts bring layers of texture and flavour.

No visit to Le Cirque is complete without their iconic Pasta Primavera, still prepared tableside, just as it was back in the day for Maccioni’s special guests. Spaghetti tossed with 35% cream, plenty of garlic, olive oil, is finished with parsley and a dash of pine nuts. Indulgent and comforting, especially with a glass of sparkling tea.

Next up was the Paupiette of Chilean Sea Bass, a painstakingly detailed recipe, the sous chef explains. Multiple bottles of wine are reduced to prepare the Barolo sauce, while potato spaghetti is delicately wrapped around the fish for that soft bite. This creation, we learn, is by the celebrated French chef Daniel Boulud.

Then comes the toughest decision of the evening, the dessert. Tiramisu, crème brûlée, or gelato? I go with the tiramisu: shortbread soaked in just the right amount of coffee, layered generously with mascarpone. I only wish it had been served slightly colder, but that is my preference.
