Talisker is the only distillery on the Isle of Skye. It was founded in 1830 by brothers Hugh and Kenneth MacAskill. It sits on the shore of Loch Harport, and you can taste the setting. The nose carries powerful peat smoke, sea-water saltiness and a citrus sweetness. On the palate, a big pepperiness builds. Wooden worm tub condensers and an unusual strength of 45.8% help give it that intensity. This is the bottle for a rainy-window evening, neat or with a drop of water.

Ardbeg is a comeback story. The Islay distillery was founded in 1815, closed for much of the 1980s and 1990s, and was rescued by Glenmorangie in 1997. Jim Murray’s Whisky Bible named the 10 Year Old World Whisky of the Year in 2008. The barley is peated to about 55 parts per million and the whisky is bottled without chill filtration, which keeps the texture oily and full. A spirit still purifier adds a citrus brightness that stops the peat from becoming one-note. Expect smoke, vanilla, dark chocolate, espresso and brine.

The Macallan was founded in 1824 by Alexander Reid, a barley farmer and school teacher. The Double Cask’s twist is that both the American and the European oak casks are seasoned with sherry in Jerez, Spain, rather than mixing bourbon and sherry barrels. The two are then married, so the richness of European oak meets the brighter vanilla of American oak. The result is a balanced malt with honey, citrus and ginger. The Double Cask series also marked the distillery’s return to age-statement whiskies.

This one has a rule: the vat is never emptied. The main solera vat was installed in 1998 and has stayed at least half full ever since, so every bottling carries a trace of earlier batches. Borrowed from the sherry trade, the method marries whisky from sherry, bourbon and new oak casks. The nose offers heather honey, vanilla fudge and rich dark fruits. It won Double Gold at the 2013 San Francisco World Spirits Competition, and it is the easiest crowd-pleaser on this list.

DoubleWood helped popularise a technique now used across Scotch. It was launched in 1993, using a wood-finishing process that malt master David Stewart designed in 1982. The whisky ages in ex-bourbon barrels and is then finished in Oloroso sherry casks. The distillery is also unusually hands-on, as it still grows its own barley, runs traditional floor maltings and employs its own coopers and a coppersmith. The taste is smooth and mellow, with nutty sweetness, cinnamon spice and a gentle layer of sherry.
The Balvenie 12 Year Old DoubleWood Whisky Price in Delhi: Rs 8,270.
