Delhi has no dearth of dessert destinations, yet until recently, it lacked a gelato experience that captured the authenticity, artistry, and sophistication of Italy’s finest gelaterias. Enter Firenze Gelateria & Caffè, a charming and meticulously curated gelateria in Defence Colony, where every element—from the gelato itself to the ambience—is a tribute to Florence, the birthplace of gelato.

The concept, a brainchild of Parth Gupta, who is behind successful ventures like Cicchetti Italiano and Bloom Cafe and Bakery, was born out of a solo journey across Italy. From Bologna to Milan, Venice to Rome, and Florence, the founder immersed himself in Italy’s gelato heritage, tasting every flavour and observing every technique.

The journey culminated in a seven-day masterclass at Carpigiani University in Bologna, the world benchmark for gelato-making, where he learned the delicate science behind gelato, from ingredient composition to freezing techniques, from texture engineering to flavour development.

“I realised there was a gap in the Indian market,” Gupta explains. “Most gelatos here couldn’t even be differentiated from ice-cream—the texture was off, flavours were imprecise, and from-scratch preparation was almost non-existent.”

Stepping into Firenze feels less like entering a commercial space and more like wandering into a restored Florentine home. Amberwood tones, mosaic flooring, textured walls, and Roman-inspired statues create an intimate, warm ambience. Brass chandeliers hang above, casting a soft glow over the 12-seat interior.

Italian tradition takes centre stage, from the charming gelato window to the sealed, airtight pozzetti display—one of the first of its kind in India. Imported straight from Italy, this system keeps the gelato’s texture and flavour intact, far beyond what standard air-cooled displays can achieve. Guests can even watch the magic unfold live, as each batch is freshly churned and served right before their eyes.

Upstairs, the café, set to open soon, promises casual Italian dining. Think schiacciata (a crisp, olive-oil brushed flatbread baked fresh in-house) sandwiches with a filling of wholesome, rustic ingredients, comforting pastas, and a selection of Italian breakfast classics.

At Firenze, gelato is more than dessert; it’s an exacting craft. Every batch starts with a base of fresh milk, cream, and sugar –made from scratch, pasteurised, and carefully balanced.

The science behind gelato is intricate: different ingredients freeze at different points, from water at 0°C to chocolate at room temperature, while sugars and salts act as anti-freezing agents. Each flavour is calculated for its freezing point, viscosity, and mouthfeel. This is why a pistachio gelato from Firenze feels remarkably different from anything else in Delhi.

Each gelato is a story in itself, where Italian tradition meets thoughtful storytelling. Creations like the Pistacchio Bronte (made with Sicilian pistachios), Mascarpone Crema, Blueberry Lemon Cheesecake, Strawberry Vanilla Mascarpone, and Amalfi Limone capture the elegance of Italian gelato.

Even the Tiramisu Classico is an exercise in precision: no pre-made syrups or shortcuts, only mascarpone gelato, homemade liqueur-soaked ladyfingers, and cocoa powder.

There are also some deeply personal creations, like Old Delhi’s Fruit Cream, inspired by the frozen fruit creams of Gupta’s childhood, and Baileyssimo, a swirl of Bailey’s and coffee with fudge and walnuts. Even the Lotus Biscoff and Butterscotch Crunch gelato combines nostalgia with innovation.

Firenze also reimagines the classic affogato. Rather than using vanilla, the gelateria has Mascarpone Crema as the base, allowing the espresso—from Indian beans sourced from Sakleshpur and Chikmagalur—to shine.

Firenze does what Delhi’s dessert scene has long needed. It transforms gelato from a casual indulgence into an artisanal experience. Every element—from the precise texture and balanced sweetness to the thoughtfully sourced ingredients and inventive flavour combinations—reflects craftsmanship at a whole new level. It is, without question, the finest gelato Delhi has ever seen.
