Robb Report India (RRI): What’s one fine dining etiquette you believe people must follow?

Chef Prateek Sadhu (PS): Be on time. I think it’s simply very respectful to the restaurant. Fine dining involves immense preparation, timing, and coordination. When guests arrive late, it disrupts the rhythm of both the kitchen and the service. Punctuality shows that you value the effort invested in creating the experience for you.

RRI: What makes the ultimate fine dining experience from a chef’s perspective?

PS: There are many elements that come together to make it memorable. The ultimate experience is shaped by the place, the food, the wine, and the company you keep. As far as dining is concerned, it has to be memorable, and when all of those elements align, the experience becomes not only enjoyable but unforgettable. Fine dining isn’t just about what’s on the plate; it’s about the entire context.

RRI: Any fine dining recommendations for our readers?

PS: One of the legendary restaurants in America is The French Laundry, and I would say that before anybody dies, that’s the restaurant they must visit. It represents a classic, refined, and impeccable expression of fine dining. And if you’re travelling in Europe, I would also recommend Noma. It’s one of the most iconic and game-changing restaurants in the world right now. That’s fine dining in a very different space—avant-garde, experimental, and boundary-pushing. Together, the two represent the full spectrum: classic fine dining and progressive fine dining. Both are essential experiences.
