Add a touch of Middle Eastern elegance to your Diwali celebrations with a velvety, rich hummus that is as indulgent as it is inviting. Perfect as a centrepiece or a side, it blends smooth textures, aromatic spices, and festive charm, creating a dip that your guests will remember long after the lights fade.
Opt for 227g of dried chickpeas, soaked overnight and boiled until tender, or high-quality canned chickpeas, rinsed and drained. The creaminess of the base sets the tone for a luxurious dip.
Blend 175–195g of well-stirred tahini with 6 tablespoons of fresh lemon juice for a silky, nutty foundation that elevates the hummus to another level.
Add 2–3 cloves of minced garlic and 1 teaspoon of ground cumin to infuse warmth and depth, enhancing the luxurious flavour without overwhelming it.
Slowly add 6–10 tablespoons of ice water while blending to achieve an airy, light texture that melts effortlessly on the palate.
Add 1 teaspoon of kosher salt and freshly cracked black pepper, adjusting to taste. The right balance of seasoning enhances every ingredient and makes the flavours sing.
Spoon the hummus into a serving dish, creating a shallow well in the centre. Drizzle with extra virgin olive oil, sprinkle sumac, paprika, and finely chopped parsley to create a visually stunning festive presentation.
Serve with freshly baked pita, crisp seasonal vegetables, or gourmet crackers. For added indulgence, scatter roasted chickpeas, olives, or pomegranate seeds to add festive colour and crunch.
